Supposedly, steaming veggies, as opposed to boiling them, is better, less nutrient loss, and they stay brighter in color.
I can't decide, raw veggies with dill dip, or broccoli with real cheddar sauce. Both sound good.

Vegetables DO NOT lose all their nutrients in cooking. Cooking sometimes can lessen them, but, mainly - if you boil them, and strain the water, or cook them too dark and mushy they might be less affective.

The main heat effect on vegetables is taste.

vegetables lost their proteins and other nutrients on getting heated. raw vegetables are healthy to eat
