This slow-baked recipe is great for salmon. It remains moist and is difficult to overcook this way. Make certain the salmon is fresh.

Preheat oven to 325 F.
Coat a shallow baking dish with 1 teaspoon olive oil.

Rinse and pat dry the salmon.
Place the salmon in the dish, skin (or side that had skin) up.

Bake for about 15 to 20 minutes, depending upon how thick.
The internal temperature should be 125 F. Some white fish fat will appear on the outside of the fish.
Remove from the oven and let sit for 3 minutes.

You can drizzle some flavored oil over the salmon after it is cooked if you like, such as heating in a pan over low heat:
3 tablespoons olive oil
1 tablespoon chopped fresh tarragon, chervil or maybe even thyme or rosemary (but I've not tried those)
1/2 close garlic
Salt and peper to taste

Enjoy!

I love salmon. This simple recipe goes well with a salad, some couscous and a glass of white wine.

Pan Seared Salmon with Strawberry Relish
4 or 5 salmon steaks
1/4 cup black pepper
1/4 cup white pepper
1/4 cup crushed red peppers
2 tbsp coarse salt
1 tbsp dried basil
1 tbsp dried thyme
mix all spices in a bowl

Relish:
1 pint strawberries
4 green onions
1/2 bundle fresh cilantro
1/4 cup dice tomatoes (the outer meat and skin only, quarter the tomato and cut the outer layer off)
3 Tbsp balsamic vinegar 1 tbsp oil
2 cloves garlic diced
pepper
coarse salt

slice the strawberries and dice the onions, garlic, and tomato. rough chop the cilantro. put it all in a bowl and add the salt pepper balsamic vinegar and oil, let sit while you prepare the salmon.

lay out the salmon steaks and coat well on both sides with the spices you have mixed together. Pan sear them with a little bit of oil to medium, there will be a stripe around the middle. Lay the salmon out on a platter and cover it with the strawberry relish.

It is a pretty spicy recipe so you must like a little heat in your food to enjoy this one

To me, the flavor of salmon works for itself, and there are many ways to cook it. If you're cooking it in an oven, I find that it's best to have a pre-heated and hot oven, first and foremost (400 degrees is fine)...lay out your fliet, skin down and cook it for apprx. 1/2 hour or until the meat is flakey, not over done. If you'd like to put something else on it for a bit of different flavor or adornment, slice up some onion, lemon and or mushrooms and top the filet, with a bit of salt, prior to cooking. The key is to not overcook the meat. Remove it from the oven and serve it (the sooner the better) on a platter, possibly garnished with some parsley on the sides (totally optional)....that's about all there is to it. People will love it. Just to name a few options, you can barbecue the filet. I generally prefer to cook it flesh down so the oils sear into the meat (it's good to be sure the grill is clean, possibly sprayed with Pam or etc. to be sure the filet doesn't stick when you remove it from the grill....cook it long enough to make it flakey--cook it enough so it isn't raw, but don't overcook to dryness. Searing in the oils is good (salmon oil is an excellent source of nutrients)...you might always consider coating the flesh with olive oil, clarified butter or somesuch, though it isn't necessary. Another alternative: if your salmon is in the round (cleaned but not cut into filets, you can make salmon steaks by cutting about two inches thick.....these can be baked, barbecued or fried....you name it. Some people like to have tartar sauce with their salmon, etc. Me? I like it plain.

Grilled Salmon Recipe :

6 Salmon Fillets

1 1/2 tbs. brown sugar

2 tsp. butter

2 tbs. Dijon mustard

1 tbs. olive oil

2 tsp. grated ginger

1 tbs. soy sauce

Melt butter and brown sugar in a small saucepan. Whisk in Dijon mustard, grated ginger, olive oil, and soy sauce.



Lay out fillets on aluminum foil and leave enough extra space to raise the foil edges into a wall. Pour sauce over salmon and place on grill (medium heat) and cook for approximately 20 minutes.



Baked Salmon Recipe :

1 cup brown rice

2-1/2 cups water

1 lb. salmon fillet

1/4 cup orange juice

1 tsp dried rosemary

1 tsp dried dill weed

1 tsp dried basil

1 tsp lemon pepper

1 tsp of dry mustard

Preheat oven to 350 degrees. In a saucepan bring 2 1/2 cups of water to a boil. Add the rice and stir. Reduce heat, cover and simmer for 20 minutes.


In large pan, add just enough water to cover the bottom of the pan. Lay the salmon filet in the pan, skin side down. Place cooked rice around the outside of the fish. Sprinkle the orange juice over the fish and rice.


In a small bowl, combine the dill weed, basil, mustard, lemon pepper, rosemary and sprinkle over the fish and rice.


Cover with aluminum foil and bake in a preheated oven for 30 to 40 minutes or until the salmon is tender and flaky.


Recipe makes four servings.


Smoked Salmon Recipe :

15-20 lbs salmon

2 cups Soy Sauce

1½ cups white sugar

1½ cups brown sugar

8-10 cloves fresh, minced Garlic

Filet salmon and cut in 2" x 3" strips that are 3/4" thick, removing skin. Marinate salmon strips overnight in sauce. Smoke according to the directions of the smoker you are using. Another option is using a charcoal water smoker. Using charcoal briquets to smoke, use 3 or 4 small chunks of green apples and their branches on top of the briquets about every 1/2 hour during the smoking process for a good smoky flavor. The charcoal grill will take over 4 hours, otherwise length depends on smoker

Broiled Dill Salmon

Ingredients:

½ cup melted butter or olive oil
2 tsp. lemon juice
1 tsp. salt
1 tbsp. fresh dill chopped
1/8 tsp. red pepper
4 salmon steaks, cut 1 inch thick (about 2 pounds)

Preparation:

1. Place melted butter, lemon juice, salt, fresh chopped dill and red pepper in small bowl and stir to combine.
2. Preheat broiler.
3. Place salmon steaks on lightly greased pan and brush with half of seasoned butter.
4. Broil, 5 inches from source of heat, 5 to 10 minutes.
5. Turn heat to 400°F, close oven and bake an additional 5 - 8 minutes.
6. Brush with remaining butter blend. Serve.

Light lager beer, Chenin Blanc

Buy fresh, wild salmon (not frozen). The flavor is very intense, and you won't need any seasonings.

Bake at 325 for 20 minutes.

Cook 1/2 cup of orzo (rice shaped pasta) in chicken broth.

Put it on a plate, and have a glass of wine.

1/4 cup vegetable oil

DIRECTIONS:
In a bowl, stir together vegetable oil, orange juice, 3 tablespoons lime juice, tequila, 1 tablespoon lime zest, 1 tablespoon habanero pepper, and garlic. Reserve a small amount to use as a basting sauce, and pour the remainder into a shallow baking dish. Place the salmon in the shallow dish, and turn to coat. Cover, and refrigerate for 2 to 4 hours, turning frequently.
In a small bowl, mix together softened butter, garlic salt, 1 tablespoon lime juice, 2 teaspoons habanero pepper, and 2 teaspoons lime zest. Cover, and refrigerate.
Preheat grill for medium heat.
Lightly oil grill grate, and place salmon on the grill. Cook salmon for 5 to 8 minutes per side, or until the fish can be easily flaked with a fork. Transfer to a serving dish, top with habanero butter, and serve.

lime juice, pepper, garlic and salt. make a pocked with aluminum foil place salmon in and add ingredients. Bake in oven for about 20 minutes at 300 degrees. You may also top your salmon with veggies and bake it all at once, you'll have a complete meal in less than 30 min.

buy fresh pieces of salmon,skin on ..dab dry...run a sharp knife over the 'skin' making shallow slits (this will prevent it curling up).......sprinkle fresh ground pepper on the 'meaty' side....before cooking salmon...put on to boil some small chat potatoes,fresh green beans and asparagus( I'll assume you know the time it takes to cook these) when the chats are just about cooked......put a pan over a high heat (not full)...don't use those none stick crap pans.....stainless steel/cast iron/copper..are all good......may smoke just a little......place 'skin' down...dont touch it with anything for atleast 2 minutes..the skin will go really crispy...then with a spatula...turn it over..(no tongs,may break it up) turn the heat down to medium and cook for about 5-6 minutes...check it with the back of the spatula..push down lightly the firmness...gives u an indicaton of how much it is cooked,best to have it a little spongy..it will keep cooking when you take the pan off the heat...leave in pan....(to rest and to soak up juices)serve up vegies on plate..then add the salmon....add some sour cream to the pan,mix untill warmed,drizzle just a little over the entire plate ...its decoration..dont drown the food in it...enjoy...this is making me hungry...mmm
