I love cheddar! Two good ones are Tillamook cheddar and Cabots Vermont extra sharp cheddar cheese. It is farm made and wonderful. Tillamook is an indulgence, it is soooo good but kinda spendy.
And you know how all the tv chefs are all about the Parmigiano Reggiano? Well, you should give Pecorino Romano a try. It is imported also, but a little cheaper. It is a little sharper but I like it better and I am Italian!
