You can go to http://tripter.co.uk/hotels/Hong-Kong/Hong-Kong/discount/-1353149/3/c/ and if you enter your dates it takes you to a page where you can see the hotels they offer on a really good map. You can also check the hotel's proximity to different districts, airports etc
For the 2 stars there are the Olympic Terrace Suite in Kowloon, The Tatami Hampton Hotel (a 2 star in Kowloon), The Salisbury YMCA ( a three star in Kowloon also), and The YMCA International House (another 3 star in Kowloon). You should check out their deals though as they have a bunch of 3 stars offering 3 nights for the cost of 2.... Don't forget to enter your dates though because the site is in the process of being upgraded.

Hong Kong has the most hostels and budget accomodations in the Kowloon area (there is a place there called the mirador mansion that has around thirty places to stay alone there and is popular with the American and European backpacker crowd). The most desrciptive site about Hong Kong hostels is Twizi.com. They have individual pages that have photos and descriptions of each hostel there (and also a map of hong kong showing all the different locations of each hostel). They only list places to stay that cost less than 25 dollars (cool site).
I have stayed at a few Hong Kong hostels, but the most popular ione is the Cosmic Guest house, and it was a good place to stay.
