SWEET AND SOUR CHICKEN

2 chicken breast
2 green bell peppers
1 red bell pepper
1 celery stalk
2 carrots
1 small can pineapple
1 small can mushrooms
soy sauce
mustard
catup
hot sauce
vinegar
brown sugar
cornstarch
garlic
ginger (one piece about 1 inch)

Cut chicken into bite-sized pieces and rub with crushed garlic and ginger and marinate for 5 mins until the wok gets hot.
Put a tablespoon of oil and the remaining garlic and the chicken.

As soon as the chicken is done, add chopped vegetables and stir fry for only a minute, as you need them to be crunchy.

Make the sauce by adding the remaining ingredients (except for the pineapple chunks) along with the ginger that has not yet been used, and add to the wok.

Add the sauces and the corn starch when you are ready to serve and allow the sauce to thicken.

At this time, stir in the pineapple chunks. Add hot sauce to taste.

Serve it over noodles or rice.

Sweet and Sour Chicken:

Ingredients:
1 Chicken, cut up into serving pieces
1/2 C. Flour
1 tsp. Salt
1/4 tsp. Black Pepper
Sauce
1 (13 1/2 oz.) can Pineapple Chunks
1 C. Sguar
1 Tbsp. Cornstarch
3/4 C. Cider Vinegar
1 Tbsp. Soy Sauce
1/4 tsp. Ginger
1 chicken Bouillion Cube
1 large Green Pepper, cut into strips

Preparation:
Wash chicken dry, and coat with flour. Heat oil and brown the chicken. Sprinkle with salt and pepper. DRain pienapple and add enoughw ater to the drained liquid to make 1 1/4 cups. Mix sauce ingredients and boil for 2 minutes. Pour this over the chicken. Add pineapple and green pepper. Bake until tender, about 30 to 40 minutes at 350 degrees.

Cut 4 chicken breast up into 1 inch pieces. Do the same with 1 red and 1 green bell pepper. Cut 1 sweet onion up into chunks. Saute chicken in 1 T. of vegetable oil with a little salt and pepper until cooked thru. Remove from pan. Saute veggies adding a little oil if needed until tender but still a little crisp. Return chicken to the pan and add on jar of sweet and sour sauce and cook until heated. Serve with rice.

Make it EZ on yourself...

Run to the market (the sell it everywhere) grab a bottle of sweet and sour sauce.

dice some onions, carrots and bell peppers
grab a can of pineapple chunks
cube some chicken breast and brown it, mix all the above in the pan let it all cook together for about 15 minutes on med heat and there you have it.

Take one cup of rice and 2 cups of water place it in the microwave (covered) for about 15 minutes. (13 if you have a powerful one). Rice Done. Its a wrap!

Chinese Recipe : Sweet and Sour Chicken

Ingredients:

4 tbsps Peanut oil, divided
1 lb. chicken breast, sliced thinly
1 c. sliced celery
1 c. Chinese cabbage, chopped
1 med. onion, diced
1-2 carrots, shredded
1 red, yellow or green pepper, diced
1/2 tsp. grated fresh ginger or 1/4 tsp. dried ginger
1 clove garlic, minced

Sauce:

1/3 c. rice wine vinegar
1/2 c. brown sugar
Salt, pepper to taste
1/4 tsp. dried ginger
1/2 c. ketchup
Pinch of garlic powder
1 c. chicken stock
2 tbsp. cornstarch
Directions:

Have all ingredients chopped and ready to go.
In a deep skillet or wok, heat 2 tbsps. oil over high heat.
Add all vegetables. Stir-fry quickly until onion is cooked and translucent. Remove to bowl.
Add 2 tbsps. oil to wok; heat. Add chicken and stir fry until no longer pink on outside (5-7 minutes).
Mix in separate bowl sauce ingredients, making sure to mix cornstarch thoroughly.
To chicken in wok, add vegetables and sauce mix. Cook over low heat until cornstarch is cooked, about 7 minutes, or until sauce is slightly thickened. Serve over hot cooked white rice.

INGREDIENTS:
1 pound skinless, boneless
chicken breast meat - cubed
2 tablespoons vegetable oil
1/2 cup sliced green bell
pepper
1/2 cup sliced red bell pepper
1 cup carrot strips
1 clove garlic, minced 1 tablespoon cornstarch
1/4 cup soy sauce
1 (8 ounce) can pineapple
chunks, juice reserved
1 tablespoon vinegar
1 tablespoon brown sugar
1/2 teaspoon ground ginger

DIRECTIONS:
1. Brown chicken in oil in a large skillet over medium high heat. Add green bell pepper, red bell pepper, carrot and garlic and stir fry for 1 to 2 minutes.
2. In a small bowl, combine cornstarch and soy sauce and mix together; pour mixture into the skillet, along with the pineapple and liquid, vinegar, sugar and ginger. Stir together and bring to a full boil.

INGREDIENTS:
2 tablespoons olive oil
1 onion, chopped
1 green bell pepper, chopped
1 large carrots, chopped
1 (14.5 ounce) can chicken
broth
1 (15 ounce) can tomato sauce
1/4 cup packed brown sugar
1/4 cup distilled white vinegar
1 (8 ounce) can crushed
pineapple with juice 1/4 cup ketchup
1 slice white bread
2 tablespoons milk
3/4 pound ground chicken
1/2 zucchini, shredded
1 egg, beaten
1 teaspoon salt
1/2 teaspoon ground black
pepper
1/2 teaspoon garlic powder
2 cups instant rice

DIRECTIONS:
1. Heat oil in a large skillet. Add onion, green pepper, and carrot. Cook for 5 minutes, until onion is softened. Stir in broth, tomato sauce, brown sugar, white vinegar, pineapple with juice, and ketchup. Simmer for 10 minutes, or until vegetables are tender.
2. Meanwhile, soak bread in milk in a large bowl until milk is absorbed. Mix together with ground chicken, shredded zucchini, egg, salt, black pepper, and garlic powder. Shape into 12 meatballs, about 2 tablespoons each.

Sweet'N'Sour Chicken

4 boned, skinned chicken breast halves - cubed
1/3 cup cornstarch
2 eggs - beaten
2 tsp. salt
1 med. green pepper - seeded, chopped
1 med. onion - minced
1 Tbls. vegetable oil
2/3 cup packed brown sugar
1/3 cup white vinegar
1/4 cup ketchup
2 Tbls. cornstarch
2 Tbls. soy sauce
20 oz. can pineapple chunks - drained, reserve juice
10 oz. jar maraschino cherries - drained, cherries halved




-Combine chicken, cornstarch, eggs, and salt in bowl and refrigerate for 30 minutes.
-Deep-fry chicken in 400 degree oil until brown.
-Drain fried chicken on brown paper bags; set aside.
-In large saucepan, sauté green pepper and onion in oil until brown.
-Add sugar, vinegar, ketchup, cornstarch, soy sauce, and pineapple juice and simmer over medium heat until thick.
-Add pineapple, cherries, and fried chicken to saucepan; stir until coated.
