The tables are 72" in diameter and I am having a hard time finding the right size tablecloths at the party supply store. They have 84" round tablecloths, no square ones and they have the regular banquet tablecloths.

Most definitely, but don't make it look like you had no choice.
Make it appear intentionally unique and classy if the occassion is such. How? I'm glad you asked.
Use two long rectangle cloths and lay them criss cross in a manner that equal amount of overhang is equal in the 4 places. Gather the middle of the overhang of each cloth up to mid-point (or higher) and create 4 points of interest to each table by using a quick sew (or pinning) method to put flowers or a bow in the center gathered part. Create a matching centerpiece for the tabletop.

If your occassion is not fancy then modify the gathering and adorn it with appropriate decorations/accessories.

You can't really. The only suggestion I have is to buy four napkin ring holders and 'tie up' the corners of the tablecloth. The weight of the holders will also weigh the cloth and keep it from sliding as much. Get a really nice centerpiece so guests' eyes settle there rather than the cloth hanging under the table. Of course this would only work if the square cloth is large enough for the round table top.

An 84" tablecloth will hang over 6" on each side which should be just right. Otherwise, if it's a paper or plastic tablecloth you're looking for given it's at a party supply store, just cut a rectangular one to fit.

Put two rectangular cloths on the table at 90 degrees to one another. That way there will by symmetry. Should look pretty classy, actually. But what's your objection to the 84" round? Seem too short to you? That's roughly six inches of overhang, which is a little short. But it may be nice, if the cloths are classy enough.

if you have a 72" round table, and can only find an 84" round tablecloth, it'll only hang over the edge a couple inches.

Try tying the ends up to the table legs with ribbons. You can use some silk flowers and secure under the ribbons also.
