Yikes! There sure are alot of people who like to think they know what they're talking about...some of them are correct...but ...I get the biggest kick out of reading some of these answers!

Anyway...Assuming that the meat is not slimy or giving off an errant odor the "browning" is probably akin to oxidation. When you cut fresh beef and lay another slice on the first where the surfaces touch they will often discolor. It usually has a dark brownish-greenish hue. Unless it has been frozen and is brown from freezer burn or is "greasy" with slime or does not smell normal, it is probably perfectly safe to eat. Without seeing it for myself it is impossible to say difinitively...just 25 years of experience including 22 years of meat cutting speaking...but what do I know?

they were probably red to start with,If they are small specks of brown spots it's called blood splashing and it's caused buy the animal being excited to much before it is slaughtered that's why they deliver the animals to the slaughter house the day before so that there settled down

It is most likely caused by lack of oxygen, let it sit out for a bit, and it should turn back to red.

it means that the air has gotten to it, and I would NOT eat it. It is starting to go bad. Throw it out or feed it to the dogs (cooked)
