I've been seeing this guy for a short time, and both of us have left long term relationships in the past year, so we're both a little afraid of getting hurt. After the first time of us being intimate he had some strange work issues and was unable to really talk to me... I jumped to a hump and dump em conclusion and confronted him.
Now he's terribly upset.
What if anything can I do?
I've had the hump and dump them happen before and i just got scared.

We have talked about it and want to move slowly into a serious relationship.
He's had to work 14 hour shifts for the last 3 days.. and from the reaction I doubt I caught him. Ive been there before.

Your conclusion was probably right, and his anger is due to being caught. Let him go, and next time wait a while before you jump into bed.

What do you expect from the relationship? Did you talk about it with him before you really started seeing each other?

Tell him what you said here, only using different terms. Honesty is the best policy and tell him you're sorry if you hurt him. And how you feel about him.

All you can do is explain why you came to the conclusion and hope that he understands.
