Thank you SexyTrojan! The quality of the melon cube will disintegrate when it's thawed due to the freezing process. Sorry, I wish there was a way to capture the summer flavors of melons and use them all year long.

I do believe that would work. Get an ice cube tray, the plastic flexible kind, and put melon chunks in it. Fill the sides with apple juice or some other very light colored liquid that is fruit flavored. Freeze and turn out as ice cubes. You could also make melon balls and skewer then onto toothpicks and freeze. When they melt they are going to be kind of mushy but will look very nice as a garnish for fruit salad or in drinks. Yes, It's best to freeze melons quickly on a tray then pack into freezer bags and containers. Can add sugar syrup to melons and freeze too.

To make a 30% syrup: 2 cups of sugar dissolved in 4 cups of cold water will yield 5 cups. Each pint of fruit will need approximately 1/2 to 2/3 cup of syrup to cover.
Headspace for fruit packed in syrup:
Pint = 1/2 inch, Quart = 1 inch

You can freeze them, but if you try to thaw them out later, you will have a mushy mess.

Melons are mostly water. When water freezes, it expands. This expansion will break open the cells of the melon cubes. When you thaw them out, it will be a flavorless mess.

i freeze all sorts of fruits for smoothies. you name it .. melon.. banana.. mangoes...

cube them.. take a freezer bag.. make sure the fruits are laid out evenly inside the bag.. and freeze..

yes, just put the melon peices in a baggie, seal it and put in freezer for 1 hour.. enjoy!
