Yes, you just want to make sure it's a neutral flavored oil. If it smells stronger than light vegetable oil, it will show in the taste of the cake.

Probably. I use canola oil. I know some people use apple sauce instead of oil because it reduces fat. Try it. Cake mix is only a dollar so if it's nasty, you'll know not to do it again and you haven't lost much.
