Good interpreters are so hard to find, that it is possible to get hired even if you only know two languages. However, the more you know the more valuable you will be and that will open up better paying jobs. My friend is an interpreter for english/tagalog only, so she is only called on for a few jobs, and doesn't work full time.

You should contact the UN interpreter department and find out what their current needs are. That way you can train for the right skill.
