I'm from the south and let me tell you how we do it. Take a couple of eggs and a splash of milk (or buttermilk) and mix it together well with a fork. Next take some All-Purpose flour and add a bit of salt, pepper, and garlic powder. Dip the chicken in the egg mixture first, then put it in the flour mixture and make sure it's coated well. Put it in a pre-heated cast iron skillet with vegetable oil. Drain it well on paper towels, and YUM-YUM...you've got GREAT fried chicken! To make really good fried chicken there's no need to add really exotic ingredients, a good seasoned and fried chicken will satisfy anyone. I hope this helps!

I do two different things. Sometimes I beer batter mine. I mix a cup of flour to a can of beer and add two tablespoons of Tony Cachere's seasoning to my batter. If you flour your chicken prior to dipping, the batter sticks best. I do this with chicken strips all the time.
Otherwise, I marinate in buttermilk. Then in a gallon size ziploc I put a couple cups flour and mix that with 2 tbps of Tony Cachere's and I bread my chicken that has marinated and fry it in good fresh vegetable oil that is already hot at 350 degrees. It tastes just like southern fried chicken when done.

Southern Fried Chicken
I modified my mothers recipe which she used for years. It is not as greasy as some of the fast food chicken places.
chicken parts or 1 frying chicken, cut up
1 cup buttermilk
2 cups self rising flour
salt and pepper (I usually use 1 tsp. salt and 1/2 tsp freshly ground black pepper)
oil (for frying)
4-6 servings
1. Wash chicken and pat dry.
2. Pour buttermilk into a small bowl.
3. Dip chicken into buttermilk, covering all surfaces.
4. Mix flour, salt, and pepper and pour into a 1 gallon zip lock bag, place dipped chicken into flour mixture and close bag.
5. Shake bag well making sure all surfaces are covered with flour.
6. Heat 3/4 inch of oil in a heavy skillet over medium heat.
7. Shake chicken again and put into oil, brown lightly on both sides, reduce heat to medium low and cook chicken to 180 degrees internal temperature on an instant read thermometer, turning frequently.
8. cooking time may vary slightly depending on your heat setting

You already got some great 1`s,but.Try adding dry powdered mustard in with salt,pepper,paprika.U can also try red pepper flakes.Add these dry ingrdients to selfrising flour 2 cups in ziploc bag.Use your own judgement as to how spicy or salty u like.Wash chicken parts in sink and just throw `em in the bag and shake it.No egg-milk mixture required! Fail safe.

try seasoning salt,garlic black pepper,flour mix all ingredients together put chicken on mixture and coat very well and cook and you will have some good fried chicken with a great taste

Use lean chicken strips. Italian breadcrumbs (or a low carb soy alternative if you prefer). Brown Sugar (or part splenda). Garlic. Salt and pepper.
Dip in mayo to make sitcky then crumb mix. Pan fry on high heat in light olive oil.

crush 2 cups cornflakes ceral, add a little bit of garlic powder and couple shakes of pepper. Beat one Egg in seperate dish. Dip the Chicken in the egg, then shake in the cornflake mix. . . fry They chicken stays nice and moist, and has a very crispy outside.

soak in milk with garlic in it for an hour.. then salt and pepper it well,, then roll in flour with paprika, garlic powder, salt pepper, onion powder and poultry seasoning.. roll in it again before placing in the pan...
also try using buttermilk to soak chicken..
