Here is a wonderfully easy, very delicious recipe:

Festive Fudge:


INGREDIENTS:

* 3 cups semi-sweet chocolate chips
* 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
* 1 dash salt
* 1 cup chopped nuts (optional)
* 1 1/2 teaspoons vanilla extract

DIRECTIONS:

1. In heavy saucepan, over low heat, melt chocolate chips with EAGLE BRAND®and salt. Remove from heat; stir in nuts (optional) and vanilla. Spread evenly into wax paper lined 8- or 9-inch square pan.
2. Chill 2 hours or until firm. Turn fudge onto cutting board; peel off paper and cut into squares. Store leftovers covered in refrigerator.

Ingredients:
1 1/4 cup milk
4 ounces unsweetened chocolate
3 cups sugar
1/8 teaspoon salt
2 tablespoons light corn syrup
1/4 cup butter or margarine
1 teaspoon vanilla
1 1/2 cup chopped nuts


Directions:

Heat milk and chocolate in large saucepan over low heat until chocolate melts. Stir until blended. Add sugar, salt and corn syrup; stir until sugar is dissolved. Cook, stirring occasionally, until candy thermometer registers 234 degrees or mixture forms soft ball when small amount is dropped in very cold water.

Remove from heat, stir in butter and cool at room temperature (without stirring) until thermometer drops to 110 degrees or bottom of pan feels just warm, about 1 hour. (Do not beat.) Stir in vanilla and nuts; pour into greased 9" square pan and let stand until firm. Cut in 1 1/2" squares.

NOTES : For smoother texture prepare fudge as above but cool chocolate mixture to 120 degrees. Beat vigorously with wooden spoon or mixer until fudge loses its gloss. Continue as above.

INGREDIENTS:
2 squares unsweetened (2 ounces) chocolate
1/4 cup milk
dash salt
2 cups sugar
1/4 cup (4 tablespoons) butter
1/2 teaspoon vanilla
1/2 cup chopped walnuts or pecans
PREPARATION:
Directions for chocolate fudge.
Melt chocolate over very low heat. Add milk and salt; stir well. Stir in sugar and bring to a full boil over medium heat. Continue to cook, stirring only once or twice, until mixture forms a soft ball -- about 235° -- in about 1/2 cup cold water; remove from heat. Add butter and vanilla and stir to blend well.
Stir in walnuts. Beat well with a large wooden spoon until mixture begins to thicken, then pour quickly into a buttered pie plate. Refrigerate; cut into squares when chocolate fudge is set.
Makes about 1 pound of chocolate fudge with walnuts.
