Update: "A common Ayurvedic ingredient is the bitter melon. The vegetable is found in many Indian dishes both for its flavour and health benefits. Known as “karela” in north India, the vegetable is peeled, then soaked or rubbed with salt to remove some of the bitterness. Medicinally, the gourd is respected for its blood-cleansing properties."

ANOTHER UPDATE: Since mine is a darker green, it is apparently very bitter. Does anyone know if it will continue to ripen, and how long that will take?

in indian its called a karela...lol...it might be a "bitter melon"

I believe it's called bittermelon. It's used for a salad. It has to be soaked in salt water or something, to take the bitterness out. But it tastes good. You cut it in half and scrape out the center where the seed are. Then you cut up the rest for the salad, marinate it, and serve with onion. Like I said, I'm not sure how it's soaked. Had it when in Hawaii, and when I visited the Philippines.

It is "monstera Deliciosa" Looks like a giant pale green banana with lizard-like hexagonal scales. The fruit ripens in stages as the scales begin to fall off. Where scales have fallen off, slice and remove flesh from cob-like core. Flesh is creamy and has a flavor of sweet bananas and acidic pineapple. Native to Mexico and Guatemala.
