I am covering an 8 in square 2 layer cake with MM fondant today. when I roll it out, do I roll it into a huge square or circle??

It doesn't really matter as long as it is large enough to cover. You will find yourself having to press and manipulate the fondant around a square shaped cake anyway. It is a bit difficult and takes some patience because the corners can be a pain in the butt. I actually used to cut the sides and reform them because it is easier than trying to make it look flat and even by pressing alone. Think of a dress pattern or better yet, an un assembled box that you have to put together. Think of the folds of a box...

It helps to keep it cold if you are going to be molding it with warm hands so I used to cut it, press it, refridgerate it a bit and then start again.

You can't just plop a square shape onto a square cake and expect the sides to just fit... It doesn't work that way you will always have excess and have to form it by hand. Cutting it to fit and removing the extra is the easiest. Just be patient and don't cut too much off! It is a pain in the butt to take it off an on, the cake get's stuck to it.

I would think you'd want to cover a square cake with a square and not a circle..

You should make it whatever shape the cake is, probably circle. However, you'll be rolling it out so much bigger than the cake it won't much make a difference. You'll need to make it bigger to have more room to work with before you trim off the extra.
