Making your own oven-dried tomatoes is less expensive than buying sun-dried tomatoes at the market, and they are much better. They make a wonderful addition to salads, pastas, as a topping for pizzas or any recipe that calls for sun-dried tomatoes.

OVEN-DRIED TOMATOES:
20 firm-ripe Roma tomatoes (or better yet, use your homegrown variety)
1/4 cup extra-virgin olive oil
2 Tablespoons balsamic vinegar
2 Tablespoons finely chopped flat-leafed parsley
Coarse or sea salt
Freshly ground pepper

Trim the stem ends off of the tomatoes, quarter lengthwise and remove and discard seeds. Place in a large, nonmetallic bowl and add the olive oil, vinegar, parsley, mixing well. Season to taste with salt and pepper. Cover bowl and allow to marinate in refrigerator for 2 to 3 hours.
Preheat oven to 200*F (95*C).
Place tomatoes in a single layer on a nonstick baking sheet.
Bake for 16 to 20 hours. Ideally, the best time to place them in the oven is around 7:00 in the evening and bake the tomatoes throughout the night. The next morning you'll have plump, juicy and intensely flavorful tomatoes. Cool completely before storing.
To store: Place dried tomatoes in sterilized glass jars and pour olive oil over to cover, seal tightly with lids. Store in the refrigerator for 2 to 3 weeks. Or, place tomatoes in a zipper-style bag and freeze for up to 3 months.

Okay...I'd avoid the potato answer at all cost...You'd have lots of brown mushy somethings...

The dehydrator is worth the expense if you like the "do-it-yourself" stuff. There are so many things you can do with one...one of the best of which is sun-dried tomatoes.

Try this twist on an old favorite...Personally I like to "fillet" Roma tomatoes for this...but it isn't absolutely necessary.

Cut the outer flesh of the tomato from the by "rolling" the tomato as you cut it about 1/4" deep and scrape the seeds into the trash...save the centers for other things. Cut the "sheets" of tomato into 1" wide sections. Put into a bowl that leaves room for tossing with olive oil, salt, fresh cracked pepper, a very little sugar to offset the acid, not for flavor... and Herbs de Provence.

Dry according to the manufacturors directions.

Go to a market where they have bulk bins. You can get sun dried tomatoes by the pound. The price wil still be high, but you get alot in a pound. Otherwise, you will need to buy a dehydrator and alot of tomatoes

2. Wash and halve tomatoes. Gently squeeze out the seeds. Place the tomatoes on a non-stick cookie sheet, and sprinkle with salt to taste.
3. Bake until tomatoes take on a leathery texture. This could literally take all day; smaller pieces will require less oven

Easiest way is to slice them and bake them at a very low temp right in your oven. I think it is recommended that you leave the oven door cracked for air circulation. It's been a while since I did them but this is the basic jist.

Go to answers.com and type in "drying tomatoes in oven". You will probably find a recipe.

I did them in the oven and put them in ziploc bag. They kept for a long, long time. I'd grab a few and toss them in sauce or in the crock pot with a roast. Good stuff!

Just put the slices in a dehydrator that is outside in the sun. Or if no dehydrator place thin slices on absorbent material(newspaper/paper towels) and cover with a fine screen (don't let it rain on them).i

Slice them up and place them on a baking tray with baking paper on it, then put in the oven till sun/oven dried enough.
My mum loves them also and because they are so expensive makes them herself.

2 peel them
3 slice them as you like
4 dehydrate them under the sun 5 enjoy!!!
