My dad crushes Ritz Brand crackers to a fine dust and uses that to coat his fish before he fries it. Not exactly fish and chips, but very very tasty!

White Perch in Beer Batter
Ingredients
(4 servings)
6 tb Flour
1/4 Can (3 oz.) beer (I use killians)
2 tb Yellow cornmeal
4 White perch scaled and
Sprinkled inside and out
With lemon juice
1/2 ts Dill weed or tarragon
1 ts Salt
1 tb Paprika
4 tb Lard or cooking oil
Instructions
Mix the flour, cornmeal, dill or tarragon, salt, and paprika in a bowl, then add the beer and beat until smooth. Dip the fish in the beer batter one at a time. Heat the lard in an iron skillet and saute the fish 8-9 minutes to the side.

Ingredients:
1 cup flour
1 egg, beaten
1 tsp garlic powder
1/2 tsp ground black pepper
1 1/2 cups beer
Method:
In a small mixing bowl add flour, egg, garlic powder, and black pepper. Stir in 1 cup of beer (you can add more than one cup to obtain your desired texture).
Remember that the more beer is cooked and reduced, the stronger the flavour will be. Pale ale is a good one to start as it has a good balance of rich flavours and fruity overtones.
