Curdles? I hope you mean separates, as in gets watery...
This can be caused by multiple things. If the pasta is not thoroughly drained or you use alot of fresh veggies in your salad they can be saturating the binding qualities of the mayo. If you're using pickles or canned products they can be dong the same. Most people think that the mayo is what spoils fastest in composite salads, but in fact it is the veggies...broccoli, peppers and onions are the biggest culprits. The egg in mayo is so pasteurized that the mayo is probably the LAST thing that spoils. Leaving it out at room temperature will great reduce the life expectancy of any composed (mutliple ingredient) food. You should only expect to get 2-3 days out of a mayo-based composite salad anyway. 4-5 out of marinated salads.

Dijon mustard blended into in basic terms slightly of trouble-free yogurt provide you a similar consistency as mayo. it could have a distinctive style besides the undeniable fact that it remains yummy. I make it like this whilst i'm out o mayo. If the yogurt is only too skinny, you are able to thicken it via putting it in a paper towel-lined strainer placed over a bowl and refrigerating it for some hours. The water interior the yogurt will drain away and the yogurt would be thick and creamy...a appropriate substitute for mayo in any recipe! good luck!

Probably because the noodles are still to hot...mayo has egg in it, so it's not curdled it's kind of scrambled!!
Let the noodles cool off!

Sometimes people use Miracle Whip or diet mayonaisse. These products will cause food such as pasta salads and egg salad to become watery after a short time. Now I only use real mayonaisse and that does not happen. Also, it is really yummy.

yep, i have to agree. the eggs in the mayo are cooking due to too much heat.
be sure to mix your mayo with any other ingredients while the pasta is cooling and draining, then stir together.

You should add about a teaspoon of sugar to it when you make it. It helps thin out the mayo.

your macaroni noodles may still be too hot... you also may not be keeping the salad refrigerated well enough
