This question was answered elsewhere in Yahoo! Answers. I forget where. Mentioned was Grannick's Bitter Apple.

Cats do need some plant material. It makes them throw up their hairballs. Perhaps you could dedicate one non-toxic plant to the kitten, and put Bitter Apple on the rest, making certain the kitten knows which one plant is okay for it.

If you are home, a water bottle with a sprayer works well for about anything. Just spray the kitten with the long shot and she'll stop what she is doing. I trained my kittens not to climb the bird cages doing this. Chances are, they will still get into the dirt when you're not home if you don't lock them up. Second choice for me was to make a cover for the dirt using window screen or chicken wire. Cut the circle the size of the pot plus a few inches, cut a slit up to the middle of the circle and cut out the area of your plant stem. Then put it on the pot and fold down the wire over the rim. My cats tried to make a litter box out of my plants and this worked for them. My dog tries to bury bagels in the dirt of my big plant to this day. Needless to say she has to eat her bagels outside now.

If she is "messing" in the dirt around the plant, put river rocks in teh dirt. Large enough that she won't just think they're toys. :) This way it's still attractive, but funtional as well.
If she is eating the plant, you can sprinkle a LITTLE bit of cayenne pepper on the leaves. She certainly won't appreciate the flavor, but it won't hurt her at all.

I have seen a product that you spray around things that you don't want animals around. It has been a while so I am not sure if it is sold any longer. You might try a pet store or someplace like Wal-Mart

It looks kinda dumb, but you can surround the base of the plant with crushed soda cans. kitties paws hate em!
