Have you looked into getting a home kit to check her blood sugar levels. They make them for people, and there not too terribly expensive.
It's important to watch what she eats. Always give her the same amount of food at the same time every day, and give her insulin at the same time every day. If she vomits, she might get low blood sugar, so keep an eye on her if she throws up. If she is more active than usual one day (an extra long walk, etc), she will be prone to getting low blood sugar.
It takes awhile to find the right balance between food intake, activity, and insulin. Not only do you have to watch for low blood sugar, but you also have to keep an eye out for high blood sugar.
The most important thing is to keep her diet and activity well regulated. That reduces the variables that can affect her blood sugar. Always be on the lookout for hypoglycemia, and be sure to carry some sugar paste (frosting tubes) or other form of sugar.
Hope this helps!

your vet can give you little sticks to test your dogs urine at home. You just put the stick in the urine stream when you take him or her for a walk. (usually easier if your dog is male) This way you will know what the proper dose it on a daily basis. Some owners with diabetic dogs train their dogs to pee on command so they can get a reading right before their injection.
