lemon juice can work, but u should buy them when their green, and freeze them, then when u put them in the cake add the lemon juice.

You can pre-soak them in salty water. The same method would work with apples as well.

freeze them, so they will bake at a slower rate than the mix...they still will have a slight discoloration
