Rake the skin of the cucumbers with a fork all around the cuke. Cut into slices to look like flowers (the tines of the fork bruise the skin). Secure the "flowers" on a wooden skewer, and use sliced carrots or cherry tomatos as the center of the "flower" Secure the flowers in a flower pot that has florist foam in the bottom. Like some smaller flower pots with plastic wrap and fill with ranch dressing or any dip you like.

Cucumbers with Sour Cream

1 cucumber, peeled and sliced thin
1/2 cup of sour cream
1 tablespoon of vinegar
1 to 1 1/2 teaspoons of sugar
salt
lots of pepper

Put cucumbers in a bowl and sprinkle lightly with salt. Mix and let sit for 30 minutes. Gently squeeze to drain out excess water. Put sour cream in a small bowl and add vinegar, sugar, salt and pepper. Mix. Pour sour cream mixture over cucumbers and mix. Refrigerate until chilled. Mix again before serving.

Cucumbers and peanut butter.
Hey this is for kids and I read some other answers and even I wouldn't eat half that stuff. But my kid will eat anything if disguised in peanut butter, chocolate, or ketchup. So.. cut the cucumber into "sticks" and have the kids dip it into peanut butter. This was in a booklet sent home by my 4 year old's preschool.

Do not peel them. Cut them in half lengthwise. With a small spoon, scrape the seeds out until each half looks like a canoe. Make a tuna salad. Fill each half with tuna salad. Sprinkle some of your favorite grated cheese on top. Chill for about 2-3 hrs. Slice in thin slices crossways. Delicious and fun for kids to eat.

Peel, thick slices, a little salt. Mix a cup of sour cream, a couple of table spoons of red wine vinegar and a pretty good couple of shakes of garlic powder. Fold in the cucumber, chill. Yum!

Slice cucumbers and put miracle whip and a little sugar, stir it up and let it set in the fridge for about an hour and stir it again so it makes a sauce. My kids love them this way.

I enjoy it garden fresh, peeled, sliced, and quartered, in a bowl with garden fresh peeled and diced tomatoes, with a little Italian dressing on top. I add a little black pepper to mine, but there is no need for anything else.

**Tip: Don't forget to "burp" the cucumbers so you won't have to burp -- Cut off each end and rub it in place until it foams. **It really does help!

Yup, cucumber slices. You can add some flavor on top of the slices to give them some touch ups too. Yummy.

Hm........ For kids? Huh... There's California Rolls (sushi), but i dont think kids would like that. You could try just giving it to kids or something, just like a real cucumber. NO RANCH! Ranch is really unnessacery and it's just fattening.
