Slices of raw potatoes were sometimes served as appetizers by Helen Nearing (Simple Food for the Good Life). She reports that they were well received, although people frequently didn't know what they were until they were told. They are crunchy and nut-like in flavor.
Potatoes have plenty of vitamins like C and B vitamins. Serving them raw will prevent any of those vitamins from being destroyed in the cooking process. It will also minimize calories (if they are not served with dips). Just avoid any green pieces, since green potatoes contain a natural toxin.

Potatoes contain glycoalkaloids, toxic compounds, of which the most prevalent are solanine and chaconine. Cooking at high temperatures (over 170 °C or 340 °F) partly destroys these. Glycoalkaloids may cause headaches, diarrhea, cramps and in severe cases coma and death; however, poisoning from potatoes occurs very rarely.

I like raw potato, it's good with a bit of salt nothing (burrrp!) ever (ccccccrrrrkkkk!!!!) happened (bbllleeeaaaahhH!!) to me from (aaaaahhhhhhrrrrrrgggggghhh!!!) doing that.
no seriously it's delicious and as long as the potato is washed it should pose no medical issues.

When I was a kid I used to eat them all the time and Im 47 now and have never had any trouble.I still on occasion take a bite if Im cutting them up for something EAT ON!

towel 42 is correct...never eat raw potatoes in large sums...a nibble once in awhile is hard to resist...but he is right...my mother told me this when i was little...you know from back in the olden days...this was not uncommon...
