How do cyclists in the Tour de France ride all day without a toilet break?

Sometimes they'll stop and pee by the side of the road. It's an unwritten rule that you don't attack when a race leader is doing this. A teammate may stop with them to help them get back up to the peloton. Or sometimes everyone just stops for a bathroom break. Other times, they'll just let loose while riding. Again, racing etttiquite demands that the riders avoid doing this when they're passing through a town.

If you watch live coverage, a camera will often be focusing on a rider, and suddenly realise that they are hitching up their shorts and they politely change cameras :D Until the late 80s (I think) they used to always stop and then someone invented the technique of peeing while cycling. In the last few years you have seen Armstrong doing it before a bit climb like the Mont Ventoux, and his teammates hung on to his bike to keep it moving while he went.

A few years ago, poor Thor Hushovd got a shocking stomach bug and was cought on camera hurtling off his bike into the bushes once or twice!

Actually they either
1) go while moving &have a buddy help steady them
2) stop in a group at the side of the road to go and use the strength of the group to catch back up to the peloton, sometimes they may get ahead of the peloton & stop at the road side the peloton then catches up to the stopped rider

They either pull over for a nature break, and then catch up, usually with the help of a teamate or two, or they just hike up their shorts and let fly on the bike as they ride.
