Pina Colada

I found this in a cookbook by BBQ guru Bobby Flay. This is a fantastic pina Colada recipe. It is easy and comparable to any Pina Colada I've ever tasted. Leave out the rum and serve it to the kids as a slush. This is how we drink it.

2 ripe bananas, peeled and chopped into chunks
18 ounces unsweetened pineapple juice
4 ounces sweetened coconut milk (I use Coco Lopez, usually found in the juice section)
4 ounces rum
2 cups ice
1/4 cup coconut

25 minutes 15 mins prep

Put banana and pineapple juice in a blender and blend until smooth.
Add Coconut milk, rum and ice.
Blend until it is the consistency of a slush.
Sprinkle with coconut and drink

PINA COLADA PERFECTO
Ingredients:
1 oz. Coconut Cream
3 Ice
2 oz. Pineapple Juice

Mixing Directions:
Mix over ice. Makes 1 serving.

PINA COLADA PUNCH
Ingredients:
46 oz. Pineapple Juice
15 oz. Coconut Cream
1 Coconut Syrup
1 Cinnamon
1.5 Pineapple Soda
1 Pint Vanilla Ice Cream

Mixing Directions:
Chill pineapple juice and soda. Blend first four ingredients in a blender until creamy. (I've found a hand blender works very well since my blender won't hold all of this liquid or you could split it into two batches.) This can be done ahead of time and put back into the fridge until serving time. When your ready to serve, place coconut mixture in punch bowl, add ice cream and allow it to dissolve somewhat. When ice cream has dissolved almost completely, add pineapple soda. Add ice ring and decorate the frothy top of the punch with thin orange slices. If you wanted to make this alcoholic, cut back a little on the amount of soda and add a bit of rum - I like it with Captain Morgan Spiced Rum.
