You should not attempt to tip Day Camp counsellors, as they are not prepared for it. If you would like to do something extra nice for a staff who went out of his or her way and helped your little camper have an excellent week, the best thing you can do is to hand write a letter to the staff's supervisor, and send a copy to the staff member as well. That is something that they can truly appreciate and it will also be something that they can add to their portfolio when looking for a job in the future. Other acceptable tokens of appreciation are a card or picture from your camper.
