More importantly, how did plants grow through the salt layers that would have covered the earth? And what did the animals eat afterwards, all plant life would have drowned and the only consumable organisms were those on the Ark?

This is an easy one! Once again, all is explained by context. Had you included the very next verse you would understand. After all, who really would forget what they just wrote one verse before?

Genesis 8:13-15

13And it came to pass in the six hundredth and first year, in the first month, the first day of the month, the waters were dried up from off the earth: and Noah removed the covering of the ark, and looked, and, behold, the face of the ground was dry.

14And in the second month, on the seven and twentieth day of the month, was the earth dried.

15And God spake unto Noah, saying,

See? Verse 14 was establishing when God spoke to Noah, the earth was completely dry. Noah had no way of knowing when the entire earth was dried, so the point here is that Noah waited on God throughout his whole situation, a whole month a half, waiting on God's word to come to him. Ta-da! Lesson learned for me!
