NeverWinter Nights, the much anticipated NWN 2, sohuld make for some good challenges.
Knights of the Old Republic, not the sequel - which is disappointing, is pretty good too. Of course, there's also classics such as Baldurs Gate, Ice Wind Dale, and the sequels to both of them. Should keep you going for a while:)
As mentioned, elder SCrolls 3 and 4 are excellent and with open game play, you can keep going back for more whenever you're up for it.

The Elder Scrolls series is great, particularly ES III Morrowind and, the latest, ES IV Oblivion. Neverwinter Nights is more true to the classic RPG, following D&D rules. Spellforce and Spellforce 2 are both entertaining, though not pure RPGs.
Of course, I'm not really an RPG fan; I just like good video games, so my advice may not be what you're looking for.

Any game from Black Isle. Fallout, Fallout 2, Baldur's Gate series (particularly 2 and the expansion packs). One of games with the best plot of all time is Planescape: Torment. A great 1st person RPG is Deus Ex. It's not from Black Isle but comes with great action, very nonlinear play, and a fantastic story. These are older games (late 90s) but classics. They have inspired a whole generation of games that came after them. Since they are older, you can probably pick them up on eBay for cheap.
