Good answer The Jimbo and victory, but a clarification, it was Peter that saw the vision. And what was the vision saying? That the gentiles were not to be shunned as "unclean" anymore. God was preparing Peter for the visit from the servants of Cornelius in Acts 10:17. God was not declaring all things clean by this vision, but allegorizing the gentile nation through the vision.
So, what was Peter's vision saying? That the kosher diet represents the covenant given to the Jews--thus the Jewish people. What does an unkosher diet represent? The gentile nations. In this YA question, it would be good to remember Paul's words to the gentile Romans...
"Receive one who is weak in the faith, but not to disputes over doubtful things. For one believes he may eat all things, but he who is weak eats only vegetables. Let not him who eats despise him who does not eat, and let not him who does not eat judge him who eats; for God has received him."
A little clarification on Mark 7:19. The phrase "In saying this, Jesus declared all foods clean." does not appear in ancient texts. The context of Jesus quote has to do with the ritual washing of hands. Mark 7:19 is not a good passage to make the argument for the gentile participation in the unkosher diet. There are better arguments elsewhere in scripture.
A better argument is to parallel the kosher diet with circumcision. Can a gentile who is not circumcised be saved? Or was this a covenant given to the Jewish people? You MUST put both together, because they are both related. And there you have much evidence to prove that the kosher dietary laws were part of the Levitical covenant to the Jewish people--NOT the gentiles.

God during that time was setting standards for a chosen people who were unclean. Having brought them out from the land of Egypt, a land full of sin and unclean doings. Baptizing them through the Red Sea, washing them and sanctifying them, created laws and statutes to set them apart from these unclean people. The book of Leviticus was the original law given to the Levite priests, and it (not eating pork) was indeed the law prior to Christ. The importance of the book of Leviticus to Christians today is that it is primarily historical to show the types of rituals that were no longer required when Christ came. If we were living 2,000 years ago the language of Leviticus would have had a much deeper meaning when compared to reading today with a modern mindset and set of interpretations.

I am part of an native america indian .. I know it very well.. We the indians STILL eat pigs. God made PIGS for food. It tasted good and delicious... Bacon sandwich sounds yummie .. i only eat once a month beca its very Fattening.... Im sure others would agree with me. Because when Jesus came he made it clean.
In the bible Paul the Apostle had a dream where a picnic blanket came down with all kinds of forbidden Jewish foods.
It came down two or three times and Jesus kept re-iterating that it was clean through Him. I think what he was trying to say was that if you are working for me i will take care of you even if you are offered food not previously allowed, usually as a guest in somebodies home.
Although this was also an allegory as Jews were previously forbidden to speak to people who were not Jews.
Jesus was trying to get through to Paul and say that we are all sons of God not just Jews and that he should go and speak and teach to those other than of his kind.
On this note, I don't eat pork and I am Christian. Pork was forbidden for the jews but Christianity brought about a new way, the old law was abolished.
the only new law Jesus brought was to "Love the Lord thy God with all thy heart and with all thy soul and with all thy mind" and "Thou shalt Love thy neigbour as thyself" "on these two commandments hang all the law and the prophets!"
In living love in everything we do we don't need to be ordered not to murder, commit adultery etc. because we would not do these things if we love one another.

Christians eat pork because Greeks and Romans loved pig meat, and Paulism -- I mean Christianity -- was created in Rome and Greece and changed in many ways to suit the natives.
Jesus was probably an Essene -- a vegetarian.
The Torah says nothing about pork being unhealthy.
