It is American buffalo. It is similar to beef but has less fat and is healthier. You can get buffalo burger, steaks roasts or whatever. As you note, it can also be made into sausage. A buffalo burger in Denver is quite common. I had one once at the Rockies ballpark. There are many farms where buffalo (technically bison) are raised for food.

Bison is buffalo. Venison is deer. Bison can come in all cuts of meat, not just sausage. It is leaner that beef.

If it is truly Bision it is a dog.
If you meant Bison, that's buffalo, which is leaner than beef, and oh so delicious.

bison is venison its a gamey meat - and if you process it you can make sausage out of it
