Why do so many mexican recipes call fo it?

Cilantro is similar to parsley. It is not spicy at all. It just adds flavor.

Cilantro is mildly spicy/peppery. Mexican recipes use it because it balances the acid generally derived from citrus or tomatoes in the dish. It also complements onions very well.

It's also easy to grow and easy to use. Unlike parsley, you don't have to stem it to make use of it. Chop it up stems and all and use it profusely!

No not at all it tastes like a sweet green and it brings a wonderful fresh natural taste to any dish not just mexican. Tastes summery to me... wonderful in a salad or soup.
