George Lukas is the creator of Star Wars. The Jedi are introduced as "guardians of peace and justice" of the Galactic Republic.

George Lukas may be the creator of Star Wars but the idea of a group of people that oversee the well being of the Galaxy has been developed by many science fiction writers. The most notable and developed were the guardians of the Foundation series of books by Issac Asimov. Other sources of inspiration for the order of the Jedi are the Japanese "jedaigeki" these were movies about the samurai warriors of Imperial Japan. There was also influence from Egan Rice Burroughs and a series of his named the Barsoom books. A leading group in those books were named the "jed"

Despite statements to the contrary George is not done with the Star Wars Saga. There is more to come. Just a matter of time and money.

The link below will take you to a history of the Jedi.

Arthur Dent, using the Infinite Improbability Drive, of course. All that levitating the Jedi do is really just a result of throwing themselves at the ground and missing.
