LAN Peru, they have a hub in Lima and an extensive codeshare with American which allows you to fly from your airport to Lima with AA/LA under one ticket. You also earn miles because LAN is part of the OneWorld alliance.

most airlines are comparable. however, if you stick with a U.S. based airline you should be fine. maintenance practices are standardized in the U.S. and you can feel comfortable knowing you will be safe. as far as service is concerned, i've heard good things about Continental.
