I just returned from Heidelberg, Germany, and there is an amazing castle (Heidelberg Castle) in the hills. It's a gorgeous city first of all, but the castle is pretty amazing as well, and is open for touring. As most castles do, this one has a fascinating history. Depending on how long you are going to be there, I highly recommend visiting Heidelberg and walking the Haupstrasse (main street with shops, restaurants, bars, etc.) too.

Several castles in Ireland, Scotland and Austria. And yes, also Neuschwanstein (seen at disney land).
