"Brain freeze" is actually a result of the nerve on your soft palate sensing cold. Your brain can't interpret the cold properly, so it gives the impression that there's a head ache. If you warm it up (Take a drink of something warm, or if that's not availible, put your toungue up there), the headache should go away.
The best thing to do is to avaoid eating too much cold too fast.

The burn in your throat when you swalloe something really hot. I get that more cause i don't eat much ice cream where i get a headache and i've never had one of those. But the burn in the throat hurts like hell!

Drink something warm.
If that's not possible, then try sticking your tongue against the back of your throat (but not so hard that you choke) or against the roof of your mouth. Your tongue is 98.6 degrees and it should warm things back up in no time.
