i'm a big fan of pho, which is a vietnamese soup with rice noodles in a broth with any or all of several different meats -- chicken, pork, sliced beef, meatballs. it's usually served with a few different fresh vegetables on the side -- bean sprouts, fresh basil and cilantro, and fresh sliced jalapeno peppers -- which can be added at your discretion.
