BAKED STUFFED EGGPLANT:
2 large eggplants
16 oz. mushrooms, sliced
1 Tablespoon oil
1 1/2 lbs. lean ground beef
1 large onion, chopped
2 (8 oz.) cans tomato sauce
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/4 teaspoon oregano
12 oz. mozzarella cheese, shredded
Wash and cut off stem of eggplants; cut in half lengthwise. Scoop out leaving 1/2-inch shells; cube centers. Arrange eggplant shells in baking dish.
In large skillet, saute eggplant cubes and mushrooms in oil for 6-8 minutes or until tender; and set aside.
In same skillet, brown ground beef and onion; drain off excess fat. Add eggplant mixture, tomato sauce, garlic powder, salt, pepper and oregano. Simmer for 5 minutes, stirring occasionally.
Spread eggplant-meat mixture into the eggplant shells and top with mozzarella cheese.
Bake at 350 degrees for 30 minutes, or until heated thoroughly. Let stand 5 minutes before serving.
MEATBALL SPECIAL:
1 lb. lean ground beef
1/2 cup bread crumbs
1 egg
1 cup tomato sauce- divided (1/4 & 3/4)
1 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon ground allspice
1 onion, chopped
2 Tablespoon oil
3 cups water
1 package Onion Soup Mix
1 1/2 cups carrots, sliced
10 oz. package frozen peas
1/2 cup green pepper, chopped
3 potatoes, cubed
Combine in a bowl; ground beef, bread crumbs, egg, 1/4 cup tomato sauce, salt, pepper, allspice and onion. Mix well and form into 12 meatballs.
In a skillet, heat oil and add meatballs. Brown meatballs on all sides and drain grease.
In a large pot, add meatballs, water, 3/4 cup tomato sauce, onion soup mix, carrots, peas, green pepper and potatoes. Bring to a boil and cook over low heat for 30 minutes or until vegetables are tender.

Make potato casserole! Scrub some potatoes and slice up; boil them for about 20-25 minutes (until they're soft). Drain them and put them into a casserole dish. Make a white sauce out of a couple tablespoons of butter, a couple tablespoons of flour (mix those together in a pan on the stove on medium heat) then add two or so cups of milk. You can substitute cream soup instead. Brown the ground beef and layer that on top of the potatoes in the dish and cover with the white sauce and cheese. Bake for about 30 minutes.

Beef and Noodle Casserole With Tomatoes and Peppers
1 tablespoon oil
1 pound lean ground beef
1/2 cup chopped green bell pepper
1/4 cup chopped red bell pepper
1/2 cup chopped onion
3 cups uncooked medium egg noodles
1 can (14.5 ounces) diced tomatoes with juice
3/4 cup water or beef broth
1/3 cup chili sauce
1 teaspoon salt
1/4 teaspoon seasoned pepper or black pepper
4 slices bacon, diced and cooked until crisp
In a large skillet, heat oil over medium heat. Cook the ground beef with green pepper and onion until beef is no longer pink and vegetables are tender. Drain off excess fat. Stir in noodles, tomatoes, water or broth, chili sauce, salt, and pepper. Mix well. Cover and cook over low heat for about 15 to 20 minutes, or until noodles are tender. Check occasionally and add a little more broth water if necessary. Stir in bacon. Serves 4.

How about meatloaf? It's not hard -- dry out a couple of pieces of white bread, break them up into breadcrumbs, mix them into the ground beef with a raw egg and maybe some Worcestershire sauce, season with seasoning salt and maybe some parsley, oregano, and/or basil, put the mixture in a bread pan, put a little ketchup on the top, bake for about an hour, and -- presto!

Meat loaf
simple 2 to 3lbs of ground beef
1 egg
1 sleeve of crackers smashed crushed up
1 sm can of tomato sauce
and 1 enevolpe of liptons onion mushroom dry soup mix
bake at 350 for 1 hr and 30 mins or untill middle is no longer pink

Quick Shepreds Pie
Brown beef,add 1 can diced tomatos or 1 cup of BBQ Sauce,pour in buttered Pie Pan,top with shredded cheese,top with Mashed Potatos sprinkle with Cheese and butter flakes..bake at 350 til cheese is melted
also good if you use a can of sauerkraut to top the meat skip the cheese and top the mashed potatos with crumbled up bacon

Depending on what you like for spicy er food I make a wonderful Indian dish with hamburger. You saute onion, garlic and optional hot pepper. and then add hamburger and saute till just cooked. Add cumin, coriander. ground red pepper and fresh cilantro if you happen to have a little garam masala add in a teaspoon. Cook off fresh peas and add to mixture. I just love to scoop this up in a warmed flour tortilla and Yumm. Makes a good lunch meal as well. Enjoy.

Shepherd's Pie
1 1/2 lbs. ground beef
2 cans mixed vegtables drained
creamed potatos (just like you were fixing them to serve alone)
shredded cheese
Brown ground beef, use as bottom layer in med sized baking dish. Drain mixed vegtables, then layer them on top of that. then use potatos as next layer, and sprinkle with a 16 oz bag of cheese. Preheat oven at 350 degrees. Bake until cheese is melted and golden brown.

Ground Beef Stroganoff
1lb of ground beef
egg noodles
sour cream
cream of mushroom soup
onion
Chop onion and brown with ground beef and drain. Add cream of mushroom soup, a dash of milk and 3tbs.of sour cream. Prepare egg noodles to pkg directions. Mix together and serve. (NOTE:** You can also add a can of drained mushroom slices to the mixture. I am not a big fan of mushrooms, so I leave them out.)

Easy Ground Beef Stroganoff
INGREDIENTS:
2 pounds ground beef
2 onions, chopped
1 clove garlic, minced
1 (4.5 ounce) can mushrooms, drained
2 teaspoons salt
1/4 teaspoon ground black pepper
2 cups hot water
6 cubes beef bouillon
4 tablespoons tomato paste
1 1/2 cups water
4 tablespoons all-purpose flour

DIRECTIONS:
Heat a large skillet over medium-high heat. Add ground beef, add onions, garlic, and mushrooms; saute until onion is golden brown. Season with salt and black pepper.
Stir 2 cups hot water, bouillon cubes, and tomato paste into meat mixture. Stir together 1 1/2 cups cold water and flour; stir into pan. Reduce heat to low, and simmer for 1 hour.
