A shake of the hand, kiss on the cheek or hug?

It depends how much you liked working with them.
If you class your relationship as 'friends' then why say goodbye? Why not see if they would like to continue the friendship outside of work? These days with email and chat, it's easy to keep a friendship going no matter how far apart you are.
If they are just work acquaintances that you got on OK with, then wish them all the best in their new life.
If you didn't enjoy working with them, just say goodbye.
If you REALLY didn't get on with them, it's up to you what you say!

How much of a friendship did you strike up with them? Do you intend to meet them again? The last guy that left at work, I shook his hand. The last girl that left at work, she was my co-worker. We had a goodbye evening out, and I hugged her. It all depends on the closeness of your relationship, the same as any greeting or goodbye.

Just be genuine... if you are really close, a hug is no problem. But if you're not sure, a handshake and kiss on the cheek is probably playing it safe.

I like the continental / Arab style of kissing both cheeks - it's informal, not too close, but close enough to be sweet.

Well, that depends totally on the relationship and what feels comfortable to you both. If it's someone you've grown close to as a friend, you treat them as such. If it's more formal, then the handshake. Since the other person is leaving, you can also let them take the lead. It's all subjective.

Irrespective of gender you can do any of the above, or as I sometimes do, all three - I've never had any complaints! Of course just because you have worked along side people for some time, it does not necessarily mean that you get on, therefore, a civilised "good, bye, good luck" will suffice!

By having a party for them. Have fun with them and buy possibly a leaving card, some cake and enjoy your time with them.

Oh, I would give them a hug. But then again I'm a hugger! Do whatever is comfortable for you.

man = shake hand, maybe buy drinks after work
woman = "professional" hug and maybe some drinks too.
