I love the idea of being able to enjoy meatballs with ought spaghetti all the time. I'm gonna make meatballs in homemade sauce store bought dinner rolls and salad. Its yummy.
1 1/2 lbs of ground beef (the fatty kind...you can skim the cooked out fat off the top of the sauce, and this hamburger is really makes the best tasting most tender meatballs.)
about 1/2 cp. of store bought bread crumbs. (any style you like)
about 1/2 cp. grated parm.
1 egg
splash of milk
salt and pepper to taste
Mix all and form all your balls. Poach them till cooked in the following (very easy) sauce recipe.
2 large cans of chunky style tomato sauce. (u can find this on the pasta sauce isle. The largest u can find is I think 24 ounces or so)
1/2 to a whole small can of chicken broth (I believe 16 ounces)
1/2 large white onion
4 cloves smashed or chopped garlic
olive oil
Saute chopped onion and garlic in olive oil till it is at your preferred doneness. Add the tomatoes and chicken stock. Reduce on a slow bubble for about 15 to 20 min...add your meatballs on low and simmer for about a 1/2 hour. Every ones simmer is different...check on them accordingly for doneness.
With rolls or garlic bread and a nice salad this is a darn good dinner.

Well, although I love to cook, we're going out to eat tonight. Probably sushi. But I collect recipes and love this site: www.allrecipes.com and www.tasteofhome.com, they are awesome!! Here's a great lowfat recipe for dessert. It's quick and easy and won't expand your waist line!!!
Low fat ice cream sandwiches
Fat-free or lite cool whip
chocolate graham crackers
Break the sheet of graham crackers in half (2 crackers together) then spread a thick layer of cool whip on top. Put the other square of graham crackers on top. Wrap each individually in plastic wrap or put in container and freeze till firm.
These are SO SO SO good!! Hope you enjoy.

Chicken alfredo for me & my boyfriend who's coming to spend some quality time w/ me tonight :) I'm grilling the chicken with some salt & pepper, boiling the noodles and making this awesome alfredo sauce, here's the recipe:
INGREDIENTS:
1/4 cup butter
1 cup heavy cream
1 clove garlic, crushed
1 1/2 cups freshly grated Parmesan cheese
DIRECTIONS:
Melt the butter in a saucepan over medium to low heat. Add cream and simmer for 5 minutes. Add garlic and cheese and whisk quickly, heating through. Stir in a bit of parsley and serve.

Try the Two Beer Margaritas
one can frozen limeade
two 12oz beers
1/2 cup tequila
put in a blender with ice
rub lime slice on rim of glass, salt and serve
You would not believe how yummy they are!

I am working at Bob Evans and I will probably eat there. I will most likely get Wildfire Chicken Salad. It consists of lettuce, corn, tortilla chips, scallions, cheddar cheese, tomatoes(I order it without them though), and chicken with BBQ sauce and Wildfire ranch dressing. I'll probably have a sprite to drink and rolls with margarine.
