I'm assuming that every culture has some sort of common saying that would mirror the 'As different as chalk and cheese' adage. If this is so how would a native Punjabi speaker express this or what would be the nearest approximation?

well im a punjabi, and this is how i would i had expressed it-
"iith kutte da baer"
