Our family favorite... Blanch the broccoli for 3-4 minutes, remove from water. Cool with cold water and ice. Cut into bite sized pieces. Next heat a heavy pan, once heated add 2 T. extra virgin olive oil. Add minced garlic, as much as you like. I use a handful of garlic per head of broccoli. Saute til warmed through. You can put a lid on the pan to warm. Serve with shredded Asiago cheese. Yum Yum! Make sure you make tons, this goes fast.

Steam the broccoli.
Make a White sauce (in a different pan):
1 tablespoon of flour
a 1/4 teaspoon of salt
2 tablespoons of butter
1 cup of milk
a 1/2 cup of grated mild cheddar cheese.
Melt the butter in a sauce pan set on medium, add the pinch of salt, add the flour all at once and stir with a whisk quickly, the result should be a smooth yellow mixture, add the milk all at once and continue stirring with the whisk. When this thickens up a bit you have made a white sauce Congratulations you are now a saucier, add the cheese and continue stirring, you can substitute a spoon for the whisk, when the cheese is all melted you now have a cheese sauce, pour this on the broccoli just before you serve it. Even kids will love broccoli when served like this.

Broccoli Potatoes
This is quite a common way of doing potatoes but I thought I would send it in anyway. Sometimes I do the recipe up until the final baking step and then just pop them in the oven 25 min before serving dinner
2 large scrubbed baking potatoes
1 cup small broccoli florets
1/4 cup low-fat sour cream
2 tablespoons chopped green onions
2 cloves garlic, minced
salt and pepper
4 servings
1. Preheat oven to 425 F.
2. Prick the scrubbed potatoes and bake for about 1 hour (Until tender).
3. Cool on a rack for about 15 min (do not turn off the oven).
4. Meanwhile steam the broccoli for 5 minutes.
5. Slice each potato in half and gently scoop out most of the flesh leaving the shells in tact.
6. In a blender or food processor, using the metal blade, combine the potato flesh,sour cream, broccoli, green onion, garlic, salt& pepper.
7. Process until smooth.
8. Spoon the potatoe mixture into potatoe shells.
9. Place on a baking sheet.
10. Bake until heated through about l5 to 20 minutes.
11. Serve immediately

roasted broccoli mmmmMmm tastey
take head of broccoli seperate into bite size flourets
in mixing bowl with broccoli add salt pepper some chopped garlic and toss with olive oil (or canola or veg oil, dosnt matter whatever you have arround) so you get an even coating. making sure that the salt and pepper and oil have been evenly distributed. layer on oiled sheet pan and bake in oven at 375 for 45 mins or until tips and ends of broccoli has begun to brown, and turn crispy.
this also work great with cauliflower, it will change the way you think of cauliflower, getting rid of the idea that cauliflower is only good when dipped in ranch (yuck).
eat it hot out of the oven
mix with carbonara, mix in stuffings
experiment with adding other ingredients
leeks (other types of onions)
chili flakes
chopped bacon
mixing with nuts and feta and mixing with spinach to make a warm salad.

One I like is to steam your broccoli, don't over cook it. Then make some Hollandaise sauce, and server over the steamed broccoli. I make my sauce by melting a stick of butter, but don't let it get brown. If you have a blender, add three egg yokes, and 1 tablespoon, and a teaspoon of lemon juice, and blend well. Don't put any salt in it if the butter already has salt in it, and very slowly add the hot melted butter to the eggs, and lemon juice while the blender is blending on a high speed. Keep blending on high speed, for a minute even after the butter is all in. Put in a container like a gravy bow. Serve immediately, Letting your guests decide weather to use the sauce or, not, and also keep a soften slick of butter on a butter dish in case they prefer that.

This broccoli casserole is made with rice, broccoli, sour cream, and cream of mushroom or celery soup, along with other ingredients and cheese.
INGREDIENTS:
20 ounces frozen chopped broccoli
2 cups cooked rice
1 jar (2 ounces) chopped pimientos, drained
1 cup finely chopped celery
1 cup sour cream
1 can (10 3/4 ounces) condensed cream of mushroom soup or cream of celery or broccoli
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup shredded Cheddar cheese
PREPARATION:
Cook broccoli as directed on package. Drain then combine with the cooked rice, pimientos, celery, sour cream, soup, salt, and pepper. Transfer to a 2-quart casserole; sprinkle cheese over top.
Bake at 325° for 20 to 30 minutes, until heated through

Spray a large frying pan with cooking oil spray. Add a chopped onion and chopped broccoli. Cook, stirring constantly at first. Sprinkle with McCormick's Grillmates Steak Seasoning. Add a little white wine (or water) and cover to steam. Remove cover and continue cooking until liquid is gone and veggies are getting a nice color and texture. You don't need to serve with anything else. Can also add cauliflower, shredded cabbage, etc. while cooking for different flavors at other times.

Try broccoli Spring Rolls. Saute onions, garlic, green peppers, scallions, chopped, blanched broccoli, canned corn and dice ham together in butter with a hint of black pepper, salt, and pepper flakes for about 3 minutes. Cool mixture and form into spring rolls using spring roll shell from your local supermarket. Place the prepared rolls on an ungreased baking sheet and brush the top side with vegetable oil. Bake at 350F until golden brown on top and crispy.

1 large head of broccoli
1 can Campbell's cheddar cheese soup
1 8oz container sour cream
1/2 cup Parmesan cheese
clean and cook broccoli in boiling water for 5 min
mix soup and sour cream in large bowl
drain broccoli and add to soup mixture
put everything in a baking dish cover top with Parmesan cheese
bake un-covered for 30-40 min or until bubbly and brown on top

Something simple is to steam the broccoli (you can do this also in the microwave) and pour cheese over it so it melts... Or do the same thing and put this broccoli and cheese over a baked potato.
You can also stir fry broccoli with chicken and pour over noodles.
Or this chicken broccoli manicotti recipe (instead of diced chicken, I boil it and shred it before putting it in the manicotti shells):
