3 pound chicken feed 2 people
Preheat oven to 350 F
Wash chicken inside and out. Dry outside with paper towels
Spinkle the inside with: salt, pepper, sage
Put tableson of vegetable oil in your hand and rub outside of chcken
Sprinkle: salt, pepper, sage and paparika on outside of chicken. Rub into oil.
Place chicken breast side up on rack.
Rack should be in roasting pan
Tent piece of aluminum foil over chicken. "V" shape not sealed around pan.
Roast in oven for about 25 min per lb. Last 15 minutes remove foil to crisp and brown.
Fork test leg. Should be tender and juices should be clear.

I haven't been cooking quite as long as those last two(but close), and perfectly roasted chicken is one of the best things I make. I go with about 20 minutes per pound in an oven around 350F, on the low side if anything, and cook until a leg feels loose. Count on an hour and a half from start to finish. Baste a couple of times during cooking with the chicken's own fat or with a bit of butter.

If you want a nice crispy skin, then cook it at 450 degrees for the first 15-20 mins. then turn the temp down to 375 and cook for another hour or so. You know it is done when it is a nice, golden brown, the juices run clear - not rosy, the drumstick will wiggle around nicely like it is ready to fall off, and if you have a thermometer, stick it near the thigh but not touching the bone and the temp of the bird should be 170 or greater.

I prefer to cook my chicken at a low temperature (250 to 300 degrees) and leave it in the oven until it is obviously tender. When you can touch the meat with a fork and the fork sinks into the meat that is in my opinion the best chicken you will ever eat.

If in doubt, always check that the bird is done by pricking it in various places (breast and leg) with a sharp, long thing. See if the juice leaving the puncture is clear or tinted with blood. Only if it's clear is the chicken properly done. An ideal instrument for this is a thin skewer.

It would be best if you bought a meat thermometer. It is done when the thickest part of the thigh is 180 degrees F.
