Do I still eat the lowfat diet or can I eat what I want?

I'd strongly suggest you stick with a low fat diet for at least three months post operatively. Then very slowly add back in to your diet those things that you simply crave and must have.
We eat too much fat in this country as it is, if you can stick with a low fat diet you will live longer and be healthier.
But, until your body has adjusted to the lack of a gallbladder, you need to be very careful with your diet, or pay the price in discomfort, distension from gas, and diarrhea.

I had my gallbladder removed in 1987 and I am still careful about what I eat. What I think you will find is that your body rejects many fatty foods and you no longer have the desire to eat them. For a few months, really behave, after that you can start experimenting and will find that you no longer crave some of the foods you did before. For me it was chili that put me in the hospital so I eat chili maybe once a year now.
Gassy foods such as beans, cabbage, eggs, etc. really upset my stomach now....this is not good news for a Russian girl!

Low fat. The doc should give you a list of the things you need to stay away from... You'll figure out what works and what doesn't for you... but it can be a painful/uncomfortable trial and error process...
