oxidation...the banana has been picked and is no longer recieving nutrients to grow. thus comming from somewhere in central america. it goes from the feild to a box usually theres some plastic in there as well. dont forget its hot and humid, then it goes to a refridgeration unit, then onto a plane or boat then its shipped to the us, then another container, agricultural inspection, then its shipped again by truck or train. then it arrives at your local grocery store. with in that period it could have been weeks since its been picked and in those weeks the climate and temperature changes literally freaked that banana out. it hits the counter at the grocery store at room temp. then to your home, you store it in the fridge or on the counter top. the countertop is best because the chances of the banana oxidizing on the outside and not on the inside more quickly, is much greater. you store it in the fridge, and it may be nice and cute and still yellow or green, but the inside is Naasty. oxidation happens to allll fruits and veggies, more quickly depending on the ammount of acidity, water, and oils, countains in the particular fruit or vegetable

If you leave a banana out to ripen for too long, it will go bad. You can mush them up then and make other food items, but they themselves don't taste good at that point.
