I would like to make a slightly spicy white cheese sauce to serve on nachos. Does anyone have a good recipe?

Here's a recipe from Texas Monthly.

1/4 cup flour
1 stick butter
1 quart whole milk
2 pounds sharp cheddar


In a 2quart saucepan, melt butter then incorporate flour to make roux (stir with a whisk or wooden spoon). With a wire wisk slowly pour in milk, whisking vigorously to avoid lumps. Once milk is incorporated, sauce is made. Simmer for ten minutes to remove flour flavor. Finally, fold in two pounds of grated cheddar. Season with salt and pepper.

You can also add a few dashes of hot sauce or a pinch of cayenne pepper at this point.

Cracker Barrel sharp chedder is the best!

Make up a paste of melted butter and flour.
Slowly add milk......whisking while you are adding it
Season with s&p and garlic
That is a basic white sauce.
To make that into a cheese sauce add your favourite shredded cheese.

You could try buying or shredding white cheddar cheese over a double boiler (or on low in the microwave) a nice twist would be to add areally good salsa to the mix. You could also chop finely and add your favorite kinds of peppers. When melting chees keep a very close eye on it! : )

Yes, Melt cream cheese with milk and add diced green peppers of your choice with some onions. (diced long green chiles are best) Yummy!

Buy it in a jar from Tostitos - it's bound to taste better than anything you'll be able to make.
