probably because we get so many different types of meat from a cow and a pig...

We get chicken thighs, legs, breasts and wings but they're all the same. (taste)

From a cow we get beef, filet, sirloin, and many different sorts of "beef" plus we get milk

and from a pig we get ham, bacon, and pork.

because cow pig and chicken are old english words

and beef, ham are alien words for the meats when the french invaded in 1066.

because we consider beef and ham meats while chicken is poultry... so we just call it chicken, just like we call fish fish
