I skin the potatoe, then grate it, then i grate a fresh yellow sweet onion, mix them together salt and pepper to taste. Use Pam cooking spray and cook till brown on both sides. I love them crispy on the outside. Bon appetite!

Breakfast Potatoes
Boil potatoes in the skin. Refrigerate until cold. Peel the skin should just peel right off with your fingers. Slice potatoes. In a skillet melt a pat of butter until bubblling. Cook potatoes over medium heat until you see the golden browning, Flip over and repeat. You can add finely chopped onion and bellpepper to the potatoes before cooking. You can also add garlic powder or Lawry's seasoning salt before cooking as well. When done sprinkle with salt & pepper.
This is much better than the fried up hash browns!! Healthier too.

Put in just enough oil to coat the bottom of the pan. Coat the pan well, maybe a quarter-inch of oil.
I actually made hash browns (more like latkes) using left over mashed potatoes, which I'd made with sour cream, butter, grated onion, garlic powder, salt and pepper. The next day, I added a bit of flour to them (maybe with some milk) to hold them together, them I coated them lightly with flour and fried them.
Delicious!

My husband makes the best hash browns... they look pretty funny, but TASTY!!
Put a cast iron skillet on the burner- turn burner to about medium. Scrub the potatoes, grate/shred them directly into the pan (saves a dish). Rummage through the fridge for something to add to it... diced ham, peas, 1/2 can of leftover soup, a little diced onion, whatever. Add that to the pan, 1/2 cup shreaded cheese (we use cheddar), and enough eggs to keep everything basically together... 2 or 3 usually do it. Mix it all together and season to taste. Make sure the egg is cooked and the cheese is melted.
ENJOY!!
Like I said- looks pretty funny, but it's tasty!!

I take my spuds and boil them..skin on until a fork will go thru them. Not to the point that they fall apart, but just firm enough so I can cut them up without looking like mashed potatoes.
I then pour some oil/butter in a fry pan..melt it. I take some onion, garlic and saute that for just abit. I then take my cut up potatoes and put them in there..not too high of a heat. I add some parley also.
You can add whatever seasonings you like..those are just my favorite.

Grate peeled potatoes on a cheese grater. Use a little oil just enough to make the skillet oily grab a handful of grated potatoes and place on hot skillet. Turn when it's golden brown or a little darker.

I GRATE RUSSET POTATOES N GRATED RED ONION AND MIX THEN SEASON W SALT N PEPPER AND PLACE A HANDFUL ON GRIDDLE PAN W A LIL OIL, SPREAD OUT MIXTURE AND WAIT TILL ONE SIDE GETS GOLDEN BROWN THEN FLIP OR I CHOP UP POTATOES AND ONIONS INTO BITE SIZE SQUARES AND THEN PREHEAT SOME VEGETABLE OIL UP AND ADD POTATOES IN REMEMBER TO SEAON W LOTS OF PEPPER AND SOME GARLIC POWDER AND SALT .
