Hard to say this early in Griffins career. We already know that Tito is a great fighter(did you see his last two fights against Ken Shamrock? Tito powned Ken!). We will just have to wait and see how Griffin holds up as time goes by, although he so far has shown himself to be one tough fighter.
It will be interesting to see how Tito holds up against Chuck. I think Tito is in for a butt kicking!

Randy Cotoure: best Heavyweight.
Chuck Liddell: best Lightheavyweight. Never Tito. It's too early to tell for Griffin.
Rich Franklin: best Middleweight.
Matt Hughes: the most dominate welterweight ever, and pound for pound one of the strongest fighters in UFC.
Lightweights: Jens Pulver. He was the only lightweight champ but he went to PRIDE FC in Japan, but he came back. They announced his comeback to UFC at the Ultimate fighter 3 finale.

Things have changed since Griffins day, as they have changed since Shamrock was in the ring.
Ortiz is conditioned and able to take on anyone in their prime - wait a few years and talent and conditioning will find a new best fighter at that time.
Just look at the great from other sports, could they compete at today's levels?
