The recipe that works best for me with my very picky eating family is what I call Pepsi Chicken. Take boneless chicken breasts and rinse with water. Put into electric frying pan, add 1 cup of ketchup and 2 cups of pepsi, cook at a light boil for one hour. It ends up tasting like BBQ chicken, very good and very easy

Chicken Ritz Recipe
I love this recipe because it's so easy to throw together and takes no time to serve. It's a half hour in the oven and it's ready. It can be prepared a day ahead of time for those busy people, just keep it refrigerated. It's served best with cranberry sauce to the side or just spread on top of it after its cooked..it's yummy!!
2 lbs boneless chicken breasts (as much as you'd like to prepare)
1/2 cup butter, melted (I use one stick for about 4 chicken breasts)
2 packages of ground-up Ritz crackers
4 servings
1. Cut off all unecessary fat from chicken breasts.
2. If breasts are thick, cut in half so you butterfly them.
3. Pound down with a mallet so they're not too thick, but not paper thin either.
4. Dip the breasts in your melted butter, both sides.
5. Dip the buttery breasts into the ritz cracker crumbs, on both sides and press firmly so the crumbs really stick to it.
6. Place on a cookie sheet in oven set at 350* for 15 minutes on both sides.

Frosted Brownies
Use your favorite brownie mix or recipe, make them thick. Get grocery store buttercream frosting from the counter. Frost liberally. Cut apart (about 2-3 bites per brownie, more makes people think twice). Remove from pan and place on serving plate. Add additional frosting decoration, like "buttons" of funfetti frosting. Cover until serving. Its a sure sell out.
Like to grill? Lemon butter, garlic, pepper chicken!
Melt butter and add lemon juice (1 to 1) add garlic and pepper to taste. Make enough to put in large freezer bag with the chicken. Add to chicken (your favorite pieces, skinless works good) in freezer bag. Let sit an hour or two. Cook on grill. Baste liberally (will cause flair ups, use these to speed cooking, can be work intesive, cooking in flames requires them to be wet with basting, which causes more fire). Do not overcook. Serve as is, with BBQ, or on sandwiches or quesidillas. Oh my, its just so good.

I invented this shortly after I got married. Everyone that's tried it has loved it!!
Chili-Cheese Potato Casserole
1 regular can Chili
1 regular can Cream of ____ (I use mushroom)
1.5 cup shreaded cheese of choice (I use cheddar)
6 or 8 potatos- pealed or scrubbed- your choice
Put the chili, soup and cheese in a large bowl, mix well. Cut the potatos in quarters lengthwise, then slice each spear- thinner is better- they cook faster that way! Fold the sliced potatos into the chili-soup mix. Dump into a 9x13 pan, cover with foil. Bake at 350 for 45 minutes. Take the foil off, turn heat off. Prepare your vegetable, set the table.

Ham Loaf. Basically ground ham and pork mixed with egg, bread crumbs and milk. Shaped into a loaf. Baked for about an hour. Basted last half hour with brown sugar, vinegar, mustard mixture as a glaze. Makes great leftovers.

Garlic Butter Pork chops with Cheesy Mashed Potato
Melt 1/2 stick of butter in a skillet and add 2 T of garlic salt.
Once butter is melted, place in pork chops and then cover with lid over medium heat for 10 minutes, then turn over chops for another 10 minutes. Check chops to see if they are done (depends on how thick they are and if you have bone in chops)
Cook and prepare potatoes like you would for mashing them, and stir in 1/2 package of shredded cheese of your choice.

Taco casserole
Take 2 lbs. ground beef, cook with 2 pkgs taco seasoning. Spread in bottom of casserole dish and top, in order, with salsa, sour cream, shredded cheese, Tostitos, salsa and cheese. Bake at 350 for 40-45 minutes (until bubbly) and serve. There's never any leftovers here!!
