I have two.

Slice them longways, into 3 or 4 slices. Put in a plastic back and pour in some olive oil. Then grill them. After they are done, sprinkle with salt and peper.

Zucchini Frittata

Cube 4 or 5 zucchini. Saute in a frying pan with a bit of oil until they are tender but not mushy.

Spray an smaller non-stick frying pan with PAM.

Transfer zucchini the small pan (so that the frying pan is full).
Mix several eggs with a bit of milk and grated parmesan cheese and a bit of black pepper.

Pour egg mixture over zucchini and cook on a low flame until the sides are dry.

Then put the frying pan under the broiler until the top is golden brown.

Cut into wedges.

While I cannot give you exact proportions, I usually use 5 medium zucchini, fry them in a 12" saute pan. I then trasfer them to a 10" pan. This usually takes about 1/2 cup of cheese and about 5 eggs.

Homemade Zucchini Pasta Sause ( pour over favorite boiled pasta)

2 or 3 zucchini cut into small squares

1 can tomato paste

1 can tomato sause

favorite Italian Spices- basil, organo, thyme, rosemary, marjoram, and garlic.

your favorite pasta- mine is ziti or penne

optional- 3 cups of mozzerella cheese

Mix all the Ingrediants together in a sause pan or pot. Cover with a lid and bring to a boil. Then let boil for 10 minutes until zucchini is soft. Then pour over favorite pasta. I love zucchini ziti baked pasta. Top with Mozzerella chesse.

To make the Zucchini ziti baked pasta put in a oven safe pan for 10 to 20 minutes at 350 degrees. Until chesse is melted. Then ready to serve. Very Yummy!!

Just plain ol' grilling, on the outdoor grill or one or those stovetop pans with the grill ridges. Oil them up a little, season them (salt, pepper, maybe oregano or cilantro) and voila! A great sidedish

i also supposed you could make a lot of zucchini bread. I don't have a recipie for that but it should be fairly easy to look up.

Zucchini bread in small loaf pans, freeze for xmas give aways. Lucky you, the varmints got mine. Many recipes on the net.

Zucchini is like the vodka of veges, it adds body to all kinds of flavours. So it is good in cake, jams, etc, but I like it fried in butter with fresh tomatoes and garlic. Just slice the ingredients, fry, and serve as a side dish.....very very fast, easy, and great. enjoy!

ZUCCHINI CAKE

2-1/2 cups all-purpose flour
2 cups sugar
1-1/2 teaspoons ground cinnamon
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup vegetable oil
4 eggs
2 cups shredded zucchini
1/2 cup walnuts, optional

FROSTING:
1 package (3 ounces) cream cheese, softened
1/4 cup butter or margarine, softened
1 tablespoon milk
1 teaspoon vanilla extract
2 cups confectioners sugar
Additional chopped walnuts, optional

In a mixing bowl, combine flour, sugar, cinnamon, salt, baking powder and baking soda. Combine oil and eggs; add to dry ingredients and mix well. Add zucchini; stir until thoroughly combined. Fold in walnuts if desired. Pour into a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool. For frosting, in a small mixing bowl, beat cream cheese, butter, milk, and vanilla until smooth. Add confectioners sugar and mix well. Frost cake. Sprinkle with nuts if desired. Store in a refrigerator. Yield: 20-24 servings.


ZUCCHINI LASAGNE

1/2 pound ground meat
1/3 cup chopped onion
15-oz. can tomato sauce
1/2 teaspoon salt
1/2 teaspoon oregano
1/4 teaspoon basil
1/8 teaspoon pepper
4 medium zucchini
8-oz. carton ricotta cheese
1 egg
2 tablespoons flour
1/4 lb. mozzarella cheese, shredded


Brown meat and onion over medium heat in large skillet. Drain excess fat. Add tomato sauce, salt, oregano, basil and pepper and bring to a boil. Reduce heat to low and simmer for 5 minutes. Slice zucchini lengthwise into 1/4-inch thick slices. In a small bowl combine ricotta cheese and egg. Arrange 1/3 of zucchini in bottom of greased 8x12-inch baking pan. Sprinkle with 1 tablespoon flour. Top with all of ricotta cheese mixture and 1/3 of meat mixture. Repeat layers with remaining zucchini and flour. Sprinkle with mozzarella cheese and remaining meat mixture. Bake at 375° for 40 minutes or until hot and bubbly. Let stand 10 minutes before serving. Makes 6 servings.

BARBEQUED ZUCCHINI

Marinate zucchini in one bottle of Italian Dressing. Let marinate for about 3 hours. Place on grill and barbeque for about 5-8 minutes. No one can resist them. You won't be able to keep them on the grill!

1. Pan-fry round zuke slices in olive oil and garlic, throw in sliced onions, then cover with tomato sauce.

2. Cut into long strips, salt and let dry. Then coat with egg and dredge in flour, then fry them up. With tomato sauce and cheese, use these fried strips to build a lasagna-type casserole, then bake. Mmm mmm good.

If you like to can, I love my grandmother's zucchini pickles. She makes them just like her dill cucumber pickles. They have a different texture...Hard to define...Meatier or Fleshier maybe? Anyway they are awesome....

oh wow send me some LOL I make a garlic and butter sauce cut them up put them on that then the grill they go it doesn't take long at all to grill I do the same with yellow squash too.

I like it sauted in olive oil with garlic, salt & pepper then topped with parmesan cheese.
